It is gloomy and rainy and foggy this morning.  Yuck!  And it's hard to look for the bright side on a messy Monday when the weather isn't cooperating.  My little one wanted to paint.  So we got out the water colors and went to work.  Surely this would brighten our day!  The problem was the yellow was all mixed up and, try as we might, we couldn't make the yellow appear.  So to match the look outside, our sun was a yucky grey.  

So when the paint would not cooperate, we decided to go on a baking spree!

My little man loves to bake with me.  We bake muffins and freeze for the weeks ahead. A zap in the microwave and you have a  warm muffin for crazy mornings.  Muffins are seriously his favorite food!  We baked a couple of old favorites with pumpkin being our go-to flavor right now.  But we tried something new too.  And it was yummy!!!

It was adapted from a recipe from Taste of Home.

Nutty Mini Muffins

24 servings

1/2 cup AP Flour
1 cup Brown Sugar
1 cup chopped walnuts or pecans or combo of both
1/3 cup Melted Butter
1/3 cup Plain Greek Yogurt
2 Eggs
1/2 tsp Vanilla

Mix together flour, sugar and nuts.  Whisk cooled butter, yogurt, eggs, and vanilla.  Combine with dry ingredients.  Spoon 3/4 full into greased mini muffin pans.  Bake in a preheated 350 degree oven for 15-18 minutes.
